Lunch can be a great way to refuel your body on a busy day. Making one of these recipes ahead can be a great way to get your protein and nutrients in when you’re running around!
Avocado toast w/ poached eggs
Start by poaching the eggs, and pop a piece of your favorite bread in the toaster. While those are going, remove the avocado from its shell, and mash with lemon juice and salt and pepper. Place the mashed avocado on the toast and top with your favorite vegetables like lettuce, radishes and tomatoes!
Spinach + Mushroom egg bites
Start by cracking six eggs into a bowl, and whisking with salt and pepper. Chop about a half cup of spinach, wash and halve half a container of Baby Belle mushrooms (or your favorite kind), and add to the egg mixture. Add a dash of milk to the egg mixture if desired. In a muffin tin, use baking spray to spray each of the holder and fill a little over half full with the mixture. Place the tin in the oven (preheated to 375), and bake for 12-15 minutes. Enjoy with your favorite fruit and piece of toast!
